Potato pancakes are shallow fried pancakes made out of grated or ground potato, with an egg and onion.  They are topped with applesauce or sour cream or they can be served plain.  Everyone loves them!

What’s the difference between potato pancakes and latkes?  They both use potatoes and eggs as the main ingredients. Latkes also include baking powder, matzo meal and sometimes milk. Potato pancakes do not include these items. Potato pancakes can be made from raw or cooked mashed potatoes.

Latke is the Yiddish word for potato pancakes.
