German potato salad varies!  Most people think that all German potato salad is served warm, but that’s only one variety.  Here, we’ll look at the three types of German potato salad. Pick your favorite!

German Potato Salad is made from potatoes that have less starch in them, because they keep their shape better after cooking. Those potatoes are called waxy potatoes.  You must avoid cooking them for too long or they become mushy. Potatoes are peeled after cooking.

German Potato Salads without Mayo

Traditionally in the South of Germany, potato salads are prepared without mayo. The dressing is made from beef broth, oil, vinegar and mustard. Add the dressing to the potatoes when they are still warm, so they can soak it up. That gives them an extraordinary taste.

In the South, there are two types of potato salads: Swabian Potato Salad and Bavarian Potato Salad.

 

Swabian Potato Salad (Grombierasalad) contains only potatoes, onions and the special dressing. It goes well with grilled pork, Bratwurst and Schnitzel. The potato salad without mayo is usually served cold. Swabian Potato salad can be topped with chives or fresh herbs.

Bavarian Potato Salad is richer, with more ingredients than the Swabian potato salad. Bavarians add pickled cucumbers and bacon.  It can be served warm or room temperature. The salad goes well with Schnitzel, sausage and any pork meal. Most people think of this salad when they think of German potato salad.

Northern German Potato Salads with Mayo

In Northern Germany, potato salads are prepared with mayo dressing and are richer in ingredients, such as pickled cucumbers, onion or radish, hard-boiled eggs, apples, and sometimes also sausage.

Rich and creamy potato salad with mayo is delicious with any meal. It is always served cold.
